Unfortunately this is not possible as the system triggers all sort of events when an order is processed. Despatch notes are sent to the channels pretty much immediately, emails generated, stock levels affected and synced with the channels. Reverting this operation is not really possible.

When there is an accidental processing of an order occurred. You can create a resent order, in order to place it into the open orders.

Other than that there is really no way around it.
