We very often create variation listings on Shopify with lots of options.

The default Variation sorting (Up & Down Arrows) is extremely time consuming.

Please improve this as it very frustrating.

The ability to 'Drag & Drop' the options would be faster, or as others have suggested some ability to 'Sort' the columns.
