At present it is not possible to view the audit trail of items that have been deleted and it is also not possible to see which user has deleted them.

In desktop it's a simple mistake to click delete rather than edit. 

It would also be very simple  to make changes to an item for illicit purposes, then delete the SKU with no way of us tracing it.
