Granular syncing of stock from locations - override setting on configurator or listing templates

Syncing inventory from locations works really well in the channel integration. The only problem for us is that it's one rule for all.. and we are finding it restrictive.
To make the best use of overseas Amazon stock we make it available on marketplaces like eBay, where it might be too slow or costly to send large heavy items from our local warehouse.
However we have products that we could cost effectively ship overseas by air and for these, we would like to utilise our warehouse stock.
What would work really well is to have an override for stock locations on the configurator itself or even on individual templates?
